Last weekend, I hosted a dessert & prayer night for my friend Kaycee. She is heading to Raleigh, NC tomorrow to begin the Fellows Program.

Kaycee’s favorite is cheesecake, so I tried it for the first time. 20120830-090026.jpg

1 cup graham cracker crumbs
1 cup chopped pecans
5 T butter
3 T sugar
Combine and pressed into a spring form pan
Bake at 350 for 5 minutes
Cool 15 minutes

3  8 oz. packs of cream cheese, softened
4 eggs
1 1/2 cup sugar
1 t vanilla
Cream together and pour over crust.  Bake at 350 for 50 minutes.  Cool 30 minutes.

1 16 oz sour cream
4 T sugar
2 t vanilla
Combine and put over filling.  Bake at 400 for 15 minutes.  Cool then chill until serving.

*I added a hint of lemon zest to brighten up the filling.
