This summer has been one of Zucchini Bread. Both our neighbor and the Clarks gave us some zucchini along with squash and cucumbers from their gardens a while back. We have been loving it! One of my favorite ways to eat zucchinis is in bread. This is the recipe I usually use, but with a couple changes. I use whole wheat flour instead of white and I use apple sauce instead of the oil.
The great thing about this recipe is that it makes two loafs. So you can enjoy one at home and give the other away!
I used the last of our zucchini today and it will probably be the last of the bread for a while.
