Easter Treats

Last week as I was planning out the weekend, I was trying to decide what kind of things to bake. I signed up to bring cupcakes to a church Egg Hunt. I know how some people get frustrated with the eggs and the Easter bunny, and trust me that I do too. But I had to take a step back and think about the positives that the “egg” represents. It symbolizes new life for little chicks. Why do we celebrate Easter during spring? How much different would it be if it were a winter celebration, but since it is celebrated now we get such clear pictures of new life. The flowers are blooming and the grass is coming back green– and just like this newness, we have new life through Christ’s resurrection. Death has lost its sting (similar to winter losing against spring) and we do not have to face the grave because Christ has beat it. I have a new appreciation of eggs this season. Sorry for that rant, but I love the way these turned out.

On Sunday, we had some friends over for lunch and I baked this yummy strawberry cake:

It is my mom’s recipe. If you have any occasions where you need to bake a cake, give this one a try. You can’t go wrong.


Strawberry Cake- My most favorite cake in all the world!!!

White Box Cake

1 T flour

1 small strawberry jello

3/4 cup oil

1/2 cup water

1/2 strawberries fresh or frozen, pureed in the food processor ( + 1/2 cup for icing)

4 eggs


Sprinkle flour over cake mix. Add jello, oil, water, & berries. Mix thoroughly with beater and add eggs one at a time.

Bake at 350 for35 minutes in 2 8″or 9″ pans.


1/4 lb. butter or margarine

1 lb. confectioner sugar

1/2 cup strawberry puree


Beat softened butter, add sugar and berries. Beat until smooth. Ice cooled cake. Store cake in the fridge until ready to serve. Enjoy!
